ITAL, is the diet of the Rastafari movement of Jamaica. It is a vegetarian diet principally intended to improve health and energy. It is thought that being vegetarian is to be closer to the universal energy and life force and to avoid bringing death to God’s creatures. Both spiritual and healthy, Ital is a great way to give yourself a boost.

ITAL is nestled away behind Coubaril Valley and in amongst the trees. We invite you to discover our world of organic gardening, organic living and to enjoy a wonderful natural and tasty lunch from a table with panoramic views of Cariblue bay. Enjoy a fantastic experience and sustainable meal that it is equally healthy, nutritious, and locally grown – completely organic in nature and filled with the right amount of nutrients to fuel the body.

Although we list ITAL as one of our restaurants, it works differently to what you might expect. The experience is available any day and starts at 11:00am until 2:00pm. There is a minimum requirement for 4 guests and a maximum of 12.

ITAL is not part of the all-inclusive offering and to take part, there is a supplement of US$50 that will be charged to your account. You can book ITAL before you arrive through your webroom or while here through the concierge.

The ITAL experience is a learning experience. Your ITAL hosts will teach you about the Rastafarian culture and explain their lifestyle of simple diet, clean eating, and the founding principles of the Rastafarian movement and food sovereignty which focuses on the ability to grow and provide for your own family, and how not to be dependent on a system.

The first part of the session will be to walk around the organic garden, where your hosts will explain the ins and outs of organic farming and point out what we currently have growing and their relative benefits and where we use them.

ITAL chefs will then teach you how to prepare and cook the natural ingredients in order that all the goodness and nutrients are retained.

Finally, we’ll sit down and have a wonderful healthy lunch enjoying the views which are spectacular.

This way of preparing food is not for everyone, but we recommend you use some time here to experience it as it is close at hand. Even if you do not turn your kitchen around to ITAL when you get home, you will have invaluable knowledge that can be applied to weight management and also about the best food to feed someone recovering from illness. ITAL is proof that a vegetarian diet does not impare strength or vitality.

Our ITAL chefs can help you create a genuinely exquisite meal full of color, taste, and purity. How about a pesto coconut chutney with grated papaya and combined with coconut milk, chili pepper, spring onion, ginger, and garlic? But we need to get all these ingredients; vegetables, fruits and herbs freshly picked and organically grown. The solution was to establish our own organic garden.
